Cheesy Veggie Balls

These veggie balls are a great replacer to meatballs, and have many similar ingredients to falafel. High in protein and fibre, these cheesy veggie balls are very healthy and delicious!

Makes 20


1/2-2 cups of white rice, cooked
3 cups of canned lentils
2 cups of canned black beans
1/4 cup of onions, minced
1/4-1/2 cups of parsley
pinch of salt and pepper
1 tbsp of cumin
1/2 of white cheddar cheese, diced
2 cups of breadcrumbs
1-2 cups of vegetable oil


Preheat the oven to 375F.

In a food processor, pulse together the lentils, black beans, parsley, salt, pepper and cumin until it forms a paste-like consistency.

In a large bowl, combine the lentils and beans mixture, rice, onions and cheese, and mix together. With your hands, form the balls and place them on a tray with a baking sheet.

Roll the balls in a bowl of breadcrumbs to create a crispy outer layer.

In a pan over medium heat, pour about 1-2 cups of vegetable oil. Brown the balls until the outside is crisp, and place them back on the baking tray.

Place the balls in the oven for about 15 minutes so the insides can cook thoroughly. Remove from the oven and serve with hummus and a side salad.
