Baked Veggies with Prosciutto

I made up this recipe on the spot today. I just used whatever was in my fridge and ta-da! This dish is light and super easy to make. I had prosciutto, but you can also use bacon or pancetta. Enjoy!

Baked Veggies and Prosciutto

Serves 2-4

1 orange bell pepper, chopped
8 brussels sprouts, chopped
1 yellow zucchini, chopped
3 cloves of garlic, chopped
1/4 cup of parsley, chopped
6 slices of prosciutto, chopped
1/4 cup of olive oil
2 tbsp of lemon juice
1 tbsp of Italian seasoning

Directions
1. Preheat the oven to 350°F.
2. Toss and marinade all the ingredients together.
3. Bake for 15 minutes and enjoy!
