Almond M&M Chocolate Chip Cookies

1/2 cup butter, room temperature
1/2 cup brown sugar
1/4 cup white sugar
1 egg, room temperature
1 tsp vanilla extract
1 1/4 cup almond flour
1 cup all purpose flour
1/2 tbsp cornstarch
1/2 tsp baking soda
1/4 tsp salt
chocolate chips

In a bowl, beat the butter and sugars. Add in the egg and vanilla, and mix well. Mix in the flours, cornstarch, baking soda and salt. Stir in the chocolate chips and M&M’s.

Refrigerate the dough for 20 minutes, and preheat the oven to 350F.

Line a baking tray with parchment paper, and scoop in heaping spoonfuls of dough.

Bake for 10 minutes or until golden brown. Enjoy!

Makes 12 cookies.
